Details

This course covers a wide range of skills which form the basis of good home cooking. We will demonstrate how to butcher a chicken and then you’ll be using the carcass to make a stock for a range of soups and gravy. We will also demonstrate how to fillet a fish and then you’ll be using the bones to make a stock for a veloute and a fish soup. There will be chance for you to hone your knife skills too with vegetable prep for a fantastic seasonal soup made using herbs from the kitchen garden.
